Green stir fry with ChalkStream trout

This is a delicious breakfast dish packed with nutrients. The cabbage pairs perfectly with the trout and provides a winning breakfast/brunch.

Ingredients

Half a fennel bulb

1 courgette

1 lettuce

2 celery stalks

1/2 clove garlic

Cold smoked ChalkStream trout 

1 egg

 

Method

Finely slice all your veg - start adding to a pan with a good glug of olive oil.

Begin with the celery, fennel & garlic as those need a little longer to caramelise - be patient as the longer they cook for the more delicious your dish will be.

Once they’ve softened add your cabbage, continue to cook for a further few minutes then finally chuck in your courgettes. I would only then continue cooking for a couple of minutes as no one likes over cooked courgette!

Season with lots salt & pepper - plate up with your cold smoked trout & eggs of your choice! I’d recommend either poached or fried.
