
Pan Fried Trout, Asparagus and Kimchi Mash
A beautiful seasonal trout dish with fresh asparagus and a tangy kimchi mash.

Serves 2
Ingredients:
2 Fillet portions of fresh ChalkStream® trout 130g each
A bunch of fresh asparagus
150g of kimchi
2 servings of potato mash
A knob of butter
A dash of olive oil
A pinch of chilli flakes
Method
Put a little oil in a pan and fry the trout over a moderate heat skin side down for a few minutes, then turn over to cook for a further couple of minutes, then pan fry the asparagus as well.
Stir the kimchi into a buttery potato mash and make a jus with the pan juices, a bit of liquid from the kimchi jar and a sprinkling of chilli flakes. Place the asparagus and trout on top of the kimchi mash and pour the jus over the trout.
