
Trout Crudo with apple and cucumber sauce

Serves 2
Ingredients:
1 fresh gleamer
1 cucumber
A cup of apple juice
1 tbs of crème fraiche
1 tbs cream cheese
A dash of basil oil
A squeeze of lime juice
Method
Create the chilled vichyssoise sauce by grating and straining the cucumber, combine with the apple juice, crème fraiche, cream cheese, basil oil and lime juice. Fillet the fresh large trout, then skin and dice a portion to suit and place on the sauce and top off with some fresh green leaves.
